Keep it Simple aka Smoked Salmon on a Budget



Cooking a massive meal is really rewarding but sometimes it's nice to just throw something together. This is why me and Mr Jones have "girl and boy" dinners. He will usually have chicken nuggets and I tend to go with one of a few options - salmon on poppy seed rolls with lemon and a rocket salad, pizza (he hates cheese so this is never on our regular menu), filled pastas (ricotta and spinach being a favourite), gyoza...
Tonight it's salmon. It's super easy to just slice some poppy seed rolls and throw together a rocket salad with a dash if soy sauce and lemon juice.

The best thing about this meal is it's healthy, it's filling and cheap! Yes, smoked salmon is cheap! I always thought it was a luxury item but after having a proper look at the salmon on offer, I found that the "trimmings" are exactly the same quality as the other smoked salmon on offer except it's not as pretty.  I'm ok with it not looking great when I'm just feeding myself but keep in mind it's also great to use if you have a recipe that calls for chopped up salmon like a pate or mousse...

I paid 98p for 120g of salmon trimmings from a supermarket here in England.  You can pay in excess of £6 for 200g of the same stuff and the only difference is you get larger slices.

If you're thinking of having a party and need some nibbles, this is also an excellent thing to try.  If you buy a few poppy seed rolls, slice them to about 1/2 inch thickness, top with the salmon and give them a little drizzle of lemon juice, you can easily serve many people without blowing the budget.
