Sweet Parsnip Loaf

Ditch the carrot cake and try a different root vegetable, parsnips, to make this sweet loaf

Let's talk about parsnips.  They kind of look like carrots but are a creamy white colour.  They are amazing with a roast chicken and are delicious in a stew.  Did you know they are an excellent source of fibre and contain all kinds of things that are good for us like potassium, iron, calcium and manganese?  On top of all this the humble parsnip also contains vitamins C, E and K!

So what to do with them?  Well it's that time of the year when I want to bake so let's stick them in a cake!

Kitchen Wish List

So the "C" word is looming ("Christmas", not the other one!) and I always get asked for present ideas but struggle because I can't remember any of the nifty things I've seen through the year.

 NOT THIS YEAR!  No.  I'm going to be organised and make a list!  Ok, so I don't really need anything but presents are nice so if I had infinite amounts of money, here's what would be in my kitchen...

Roasted Pumpkin Seeds

Don't throw away those pumpkin seeds when you're baking or carving a Halloween pumpkin!  Use my recipe for salted chilli pumpkin seeds for a healthy and nutritious snack!

Today was disgusting!  Rain, wind, clouds...I felt a little sorry for Mr Jones this morning when I dropped him off at football.  Even though he wasn't playing it was still pretty awful weather and am glad it wasn't me standing on the side of the pitch!  As expected, he came back soaked!

When I baked the spiced pumpkin loaf on Friday I knew that I would want to do something with the seeds but hadn't quite made up my mind so kept them in a small bowl covered with cling film so they didn't dry out.  I wasn't sure if they would keep but they were still in perfect condition and ready to roast!

Spiced Pumpkin Loaf

I have been hanging on to summer for as long as possible but yesterday firmly put me in autumn mode thanks to the wind and drizzle and general greyness.  I took the day off work so that I could be home for the annual gas safety check (all good!) and tied it in with our food delivery, did a bit of hoovering and changed the cat litter.

Then I went into town and bought a pumpkin.

It's really getting to be that time of year where all I want for dinner is comfort food but I tend to get the food guilt.  Yep, food guilt.  What I really want is something cheesy and gooey and stupidly high in calories but I know that after I eat it I'll just feel bad for stuffing my face.  It's a terrible affliction.  So what can you do?  Well, noodle soup of course!

You know you get crazy cravings for certain random foods?  Usually from a place that is either far, far away or no longer open?

Crazy Bread from Little Caesar's (an American pizza chain) is one of my cravings from when I used to live in the States.  Ever since I randomly found a copycat recipe a few weeks ago I've not been able to get them out of my mind.  Soft, slightly chewy and laden with butter, garlic and parmesan...mmmmm....They were so good that my sister and I used to fight about who had the most breadsticks and mum had to intervene (I might add that we had the same fights about who had the biggest Yorkshire pudding...)
