There are times when I want all the fresh, healthy things that you get with sushi but can't be faffed with all the prep and rolling and trying to make it all stay in tight little rolls so they don't fall apart in the space between plate and mouth…I know you're with me on this one…
So here's the solution - fill a bowl with sushi rice and then top it with all the scrummy things you would normally find inside your favourite sushi roll!
My absolute favourite sushi at the moment is the wasabe salmon roll from Zero Juice & Sushi here in Berkhamsted so wanted to take inspiration from that to create a sort of deconstructed sushi roll in a bowl.
The first thing you need to do is get the rice going. I was a little intimidated the first time I attempted making sushi rice beacuse I generally fail pretty badly when making plain rice but it's actually quite easy! Instructions are *here*.
With the rice cooling you can crack on with the rest of the ingredients. My favourite combination is smoked salmon, avocado, tamagoyaki, red pepper, savoy cabbage sauteed with garlic, fish eggs and a sprinkling of finely sliced nori. I like to mix up some soy sauce, sesame oil and rice wine vinegar as a simple sauce that I can drizzle across everything.
Oh, and it's perfect to make ahead for lunch the next day (only if you want your colleagues to give you jealous looks because this looks a million times tastier than a sandwich!).
There are no rules when it comes to "mixing and matching" what you put in your sushi bowl - I'd recommend one meat/fish, a few veggies and a topping but I won't tell if you go crazy for veg or want a bowl full of fish!
